Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1.5 lbs small potatoes (like Yukon Gold or red potatoes), quartered
- 4 tablespoons olive oil, divided
- 1 teaspoon salt, divided
- 0.5 teaspoon black pepper, divided
- 4 cloves garlic, minced
- 0.5 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potatoes with 2 tablespoons of olive oil, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Spread them in a single layer on a baking sheet.
- Roast the potatoes for 20 minutes.
- While the potatoes roast, pat the chicken pieces dry. In the same bowl (no need to wash), toss the chicken with the remaining 2 tablespoons of olive oil, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper.
- After 20 minutes, add the seasoned chicken to the baking sheet with the potatoes.
- In a small bowl, mix the minced garlic and Parmesan cheese.
- Sprinkle the garlic Parmesan mixture evenly over the chicken and potatoes.
- Return the baking sheet to the oven and bake for another 20-25 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown.
