Instructions
- Start by chopping the broccoli into small, bite-sized florets and mincing the garlic.
- In a large pot, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.
- Toss in the chopped broccoli to the pot and sauté for another 2-3 minutes until bright green and slightly tender.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for about 20-30 minutes, or until the broccoli is tender.
- If you prefer a creamy texture, carefully blend the soup with an immersion blender until smooth. For a chunkier version, stir it as is.
