Ingredients

  • 34 tbsp butter (melted)
  • 34 cloves garlic (minced)
  • 12 tbsp olive oil
  • Salt & black pepper (to taste)
  • Optional: chopped parsley
  • Optional: red pepper flakes or Italian herbs

Instructions

  1. Prep the skewers.
  2. If using wooden skewers, soak them in water for 20–30 minutes to prevent burning during grilling.
  3. Cut the zucchini.
  4. Slice the zucchini into thick rounds or chunks for easy skewering.
  5. Make garlic butter.
  6. Mix the melted butter, minced garlic, olive oil, salt, and pepper in a bowl.
  7. Assemble.
  8. Thread the zucchini onto the skewers, leaving a little space between pieces.
  9. Brush & season.
  10. Brush the skewers generously with the garlic butter mixture.
  11. Cook.
  12. Grill the skewers over medium heat for about 10–12 minutes, turning occasionally until tender and slightly charred.
  13. Serve.
  14. Brush with extra garlic butter before garnishing with chopped parsley and serve hot.
