Ingredients

- 3–4 medium zucchini (sliced into rounds or chunks)
- 3–4 tbsp butter (melted)
- 3–4 cloves garlic (minced)
- 1–2 tbsp olive oil
- Salt & black pepper (to taste)
- Optional: chopped parsley
- Optional: red pepper flakes or Italian herbs
Instructions
- Prep the skewers.
- If using wooden skewers, soak them in water for 20–30 minutes to prevent burning during grilling.
- Cut the zucchini.
- Slice the zucchini into thick rounds or chunks for easy skewering.
- Make garlic butter.
- Mix the melted butter, minced garlic, olive oil, salt, and pepper in a bowl.
- Assemble.
- Thread the zucchini onto the skewers, leaving a little space between pieces.
- Brush & season.
- Brush the skewers generously with the garlic butter mixture.
- Cook.
- Grill the skewers over medium heat for about 10–12 minutes, turning occasionally until tender and slightly charred.
- Serve.
- Brush with extra garlic butter before garnishing with chopped parsley and serve hot.

- Use uniform sizes for zucchini to ensure even cooking.
