Ingredients

- 1 bag (16 oz) coleslaw mix
- 1 can black beans (rinsed & drained)
- 1½ cups corn (canned or fresh)
- 1 jalapeño (finely diced)
- 1 red bell pepper (diced)
- 3 green onions (sliced)
- ¼ cup fresh cilantro (chopped)
- 1 tbsp taco seasoning
- ½ tsp ground cumin
- 1 bag chili cheese corn chips (Fritos), reserve some for topping
- ½ cup sour cream
- ½ cup mayonnaise
- ¼ cup lime juice
- 2 tbsp chipotle sauce (from canned chipotles in adobo)
Instructions
- In a large bowl, combine the coleslaw mix, black beans, corn, jalapeño, bell pepper, green onions, and cilantro.
- Add taco seasoning and cumin, tossing until evenly mixed.
- In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce.
- Pour the dressing over the salad mixture and toss to coat.
- Stir in most of the corn chips for a crushed texture.
- Top with reserved chips just before serving for maximum crunch.
