Ingredients

  • 1 tablespoon Peanut Oil (or Vegetable Oil)
  • 4 cups Leftover Rice (chilled)
  • 1 medium Yellow Onion (diced)
  • 1 tablespoon Ginger (freshly minced)
  • 2 cloves Garlic (minced)
  • 3 stalks Green Onions (sliced)
  • 1 pound Char Siu Pork (diced)
  • 4 large Eggs (beaten)
  • 1/4 cup XO Sauce

Instructions

  1. Heat 1 tablespoon of peanut oil in a large skillet over high heat until it shimmers. Add the diced yellow onion and char siu pork, stirring continuously for 1-2 minutes until the onion is soft and caramelized.
  2. Stir in the white parts of the sliced green onions, minced ginger, and garlic. Cook for 30 seconds until fragrant.
  3. Add the chilled leftover rice to the skillet, using a spatula to break up any clumps. Cook for about 2 minutes until warmed through and slightly crispy.
  4. Pour the XO sauce over the rice, tossing together thoroughly. Cook for another minute, ensuring every bite is coated.
  5. Push the rice mixture to one side of the skillet. Add another tablespoon of oil and scramble the beaten eggs on the other side for 1-2 minutes; mix into the rice.
  6. Stir in the remaining green onion greens and cook for an additional 30 seconds before tasting and adjusting seasoning.
  7. Remove from heat and serve hot as a main course or side dish.
