Transform your leftover char siu into a delicious bowl of XO Fried Rice with Char Siu, a quick gourmet comfort food.

- 1 tablespoon Peanut Oil (or Vegetable Oil)
- 4 cups Leftover Rice (chilled)
- 1 medium Yellow Onion (diced)
- 1 tablespoon Ginger (freshly minced)
- 2 cloves Garlic (minced)
- 3 stalks Green Onions (sliced)
- 1 pound Char Siu Pork (diced)
- 4 large Eggs (beaten)
- 1/4 cup XO Sauce
Instructions
- Heat 1 tablespoon of peanut oil in a large skillet over high heat until it shimmers. Add the diced yellow onion and char siu pork, stirring continuously for 1-2 minutes until the onion is soft and caramelized.
- Stir in the white parts of the sliced green onions, minced ginger, and garlic. Cook for 30 seconds until fragrant.
- Add the chilled leftover rice to the skillet, using a spatula to break up any clumps. Cook for about 2 minutes until warmed through and slightly crispy.
- Pour the XO sauce over the rice, tossing together thoroughly. Cook for another minute, ensuring every bite is coated.
- Push the rice mixture to one side of the skillet. Add another tablespoon of oil and scramble the beaten eggs on the other side for 1-2 minutes; mix into the rice.
- Stir in the remaining green onion greens and cook for an additional 30 seconds before tasting and adjusting seasoning.
- Remove from heat and serve hot as a main course or side dish.
