- 1 lb Smoked Polish Sausage (Can substitute with Andouille or chorizo)
- 4 medium Russet or Yukon Gold Potatoes (Cut into rounds or cubes)
- 1 large Yellow Onion (Can use red onion for milder taste)
- 2 tbsp Olive Oil (Or use butter for richer taste)
- 1 tsp Garlic Powder (Fresh minced garlic can be used)
- 1 tsp Smoked Paprika (Optional, regular paprika can substitute)
- to taste Salt
- to taste Pepper
- to taste Fresh Parsley (Optional)
Instructions
- Begin by peeling and slicing your potatoes into rounds or cubes, ensuring even cooking. Thinly slice the onions and cut the sausage into bite-sized pieces.
- Heat olive oil or butter in a large skillet over medium heat. Add the sausage and cook it until browned and slightly crisp, about 5-6 minutes. Once done, remove from the skillet and set aside.
- In the same skillet, toss in the thinly sliced onions. Sauté them until they become soft and lightly caramelized, around 6-8 minutes.
- Add the prepared potatoes to the skillet with the caramelized onions. Season with salt, pepper, and garlic powder, cooking while flipping occasionally until the potatoes are golden brown and tender, approximately 15-20 minutes.
- Return the browned sausage to the skillet. Toss all the ingredients together and heat through for another 2-3 minutes. Serve hot, garnished with fresh parsley if desired.
