Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 large yellow onions, thinly sliced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp black pepper
- 1/4 tsp salt
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 cup shredded Gruyere cheese
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet or Dutch oven, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply caramelized and golden brown, about 20-25 minutes.
- Add the minced garlic, dried thyme, black pepper, and salt to the skillet. Cook for 1 minute more until fragrant.
- Add the bite-sized chicken pieces to the skillet and cook until lightly browned on all sides.
- Stir in the uncooked white rice and chicken broth. Bring to a simmer.
- Cover the skillet and transfer it to the preheated oven. Bake for 25-30 minutes, or until the rice is cooked through and the liquid is absorbed.
- Remove the skillet from the oven. Sprinkle the shredded Gruyere cheese evenly over the top.
- Return the skillet to the oven, uncovered, and bake for another 5-7 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving your delicious French Onion Chicken Rice.
Notes
- For an even richer flavor, you can deglaze the pan with a splash of dry white wine after caramelizing the onions.
- If you don’t have Gruyere cheese, Swiss or provolone cheese can be substituted.
