- 1 cup French green lentils
- 4 strips bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 6 cups chicken or vegetable broth
- 2 cups water
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vinegar or lemon juice (optional)
Instructions
- Chop bacon, dice onion, carrots, and celery, mince garlic, and rinse lentils.
- In a large pot, cook bacon over medium heat until crisp. Remove excess grease if needed.
- Add onion, carrots, and celery to the pot. Cook until softened, then add garlic and cook briefly.
- Stir in lentils, broth, water, bay leaves, and thyme.
- Bring to a gentle boil, then reduce heat and simmer for 35–45 minutes until lentils are tender.
- Season with salt and black pepper to taste. Remove bay leaves.
- Add a splash of vinegar or lemon juice if desired, then serve hot.
Notes
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- It freezes well for up to 3 months.
