- 1 large egg
- 2 tablespoons brewed espresso (cooled)
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 2 tablespoons maple syrup
- ½ teaspoon ground cinnamon
- 1–2 tablespoons milk (or more for desired consistency)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, rolled oats, baking soda, baking powder, ground cinnamon, ground ginger, ground cardamom, ground cloves, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg, cooled espresso, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Use a tablespoon or cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Prepare the maple cinnamon icing by whisking together the powdered sugar, maple syrup, ground cinnamon, and milk until smooth.
- Drizzle the icing over the cooled cookies and allow to set before serving.
