  • ½ cup unsalted butter (softened)
  • ½ cup brown sugar (packed)
  • ¼ cup granulated sugar
  • 1 large egg
  • 2 tablespoons brewed espresso (cooled)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • 12 tablespoons milk (or more for desired consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, rolled oats, baking soda, baking powder, ground cinnamon, ground ginger, ground cardamom, ground cloves, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, cooled espresso, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Use a tablespoon or cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. Prepare the maple cinnamon icing by whisking together the powdered sugar, maple syrup, ground cinnamon, and milk until smooth.
  10. Drizzle the icing over the cooled cookies and allow to set before serving.
