- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup uncooked long-grain white rice
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup plain Greek yogurt
- 1 cucumber, peeled, seeded, and grated
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon dried dill
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F.
- In a large baking dish, combine the chicken, rice, diced tomatoes, and chicken broth. Stir to mix.
- In a separate bowl, mix together the Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper.
- Pour the tzatziki sauce over the chicken and rice mixture and stir to combine.
- Cover the baking dish with foil and bake for 30-35 minutes, or until the rice is tender and the chicken is cooked through.
- Remove the foil during the last 5 minutes of baking to allow the top to brown slightly.
- Serve hot, garnished with additional dill or chopped parsley if desired.
