Instructions
- Preheat oven to 325°F (160°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, 2 tablespoons sugar, and salt. Press mixture evenly into the bottom of a 9-inch springform pan.
- Bake for 10 minutes. Let cool.
- In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth. Beat in flour and vanilla extract. Add eggs one at a time, beating well after each addition. Stir in sour cream.
- Divide half of the batter into a separate bowl. Stir in strawberry puree.
- In a small bowl, whisk together cocoa powder and hot water to create a smooth paste. Stir the paste into the remaining half of the cream cheese batter. This creates your decadent chocolate strawberry swirl base.
- Pour half of the chocolate batter into the prepared crust. Dollop spoonfuls of strawberry batter over the chocolate batter. Swirl gently with a knife to create a marbled effect.
- Pour the remaining chocolate batter over the strawberry batter. Dollop the remaining strawberry batter on top. Swirl gently to create more of the decadent chocolate strawberry swirl pattern.
- Bake for 60-70 minutes, or until the center is almost set.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from oven and cool completely on a wire rack.
- Chill in the refrigerator for at least 4 hours before serving.
