  • 1 can Coconut Milk
  • 1 cup Chicken Broth
  • 1 tablespoon Brown Sugar
  • 1/4 cup Fresh Cilantro
  • 4 pieces Roti Flatbreads

Instructions

  1. Heat the Vegetable Oil in a large skillet over medium heat. Add chopped Onion and sauté for 2-3 minutes until softened.
  2. Stir in minced Garlic and freshly grated Ginger. Cook for an additional 1-2 minutes until fragrant.
  3. Add Curry Powder, Ground Turmeric, Ground Cumin, and Ground Cinnamon to the skillet. Stir for 1 minute to release flavors.
  4. Add Chicken Thighs to the skillet, browning for about 5 minutes on each side until golden.
  5. Pour in Coconut Milk, Chicken Broth, and Brown Sugar. Mix well and bring to a gentle simmer.
  6. Cover the pan and simmer for 20-25 minutes to fully cook the chicken.
  7. Once cooked, shred the chicken in the skillet and stir in freshly chopped Cilantro.
  8. Warm the Roti Flatbreads in a separate skillet for 1-2 minutes on each side until pliable.
