- 1 medium Onion

- 2 tablespoons Curry Powder

- 1 teaspoon Ground Cumin
- 1 teaspoon Ground Cinnamon
- 1 can Coconut Milk
- 1 cup Chicken Broth
- 1 tablespoon Brown Sugar
- 1/4 cup Fresh Cilantro
- 4 pieces Roti Flatbreads
Instructions
- Heat the Vegetable Oil in a large skillet over medium heat. Add chopped Onion and sauté for 2-3 minutes until softened.
- Stir in minced Garlic and freshly grated Ginger. Cook for an additional 1-2 minutes until fragrant.
- Add Curry Powder, Ground Turmeric, Ground Cumin, and Ground Cinnamon to the skillet. Stir for 1 minute to release flavors.
- Add Chicken Thighs to the skillet, browning for about 5 minutes on each side until golden.
- Pour in Coconut Milk, Chicken Broth, and Brown Sugar. Mix well and bring to a gentle simmer.
- Cover the pan and simmer for 20-25 minutes to fully cook the chicken.
- Once cooked, shred the chicken in the skillet and stir in freshly chopped Cilantro.
- Warm the Roti Flatbreads in a separate skillet for 1-2 minutes on each side until pliable.
- Spoon the curry onto each roti, fold, and enjoy warm.
