Ingredients

- 2 lbs cooked shrimp (peeled, tails removed, chilled)
- 2 cups cucumbers, sliced (Persian or similar)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 teaspoon Dijon mustard
- 2 tablespoons fresh lemon juice
- 1/4 cup fresh dill or chives (chopped)
- Salt and black pepper to taste
- Optional: celery or red onion for extra crunch
Instructions
- In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, lemon juice, and herbs until smooth.
- In a large bowl, add the chilled shrimp and sliced cucumbers.
- Pour the dressing over the shrimp and cucumbers and gently toss to coat evenly.
- Season with salt and black pepper to taste.
- Transfer to a serving platter and refrigerate for 15-30 minutes before serving.
