Description

Ingredients

  • 2 cups shredded pork (from pork shoulder)
  • 1 cup cooked rice (200g)
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 1/2 cup tomato sauce
  • 1 tablespoon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. If not already done, cook and shred pork shoulder. Season lightly with salt and pepper.
  2. Heat olive oil in a skillet and sauté onions, garlic, and bell peppers until soft.
  3. Add shredded pork and tomato sauce to the skillet and mix well.
  4. In a baking dish, combine pork mixture with cooked rice and mustard. Mix evenly.
  5. Top with shredded cheese.
  6. Preheat oven to 375°F (190°C) and bake for 20–25 minutes until cheese is melted and bubbly.
  7. Let rest for a few minutes before serving.
