- 2 cups shredded pork (from pork shoulder)
- 1 cup cooked rice (200g)
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 2 cloves garlic, minced
- 1 cup shredded cheese
- 1/2 cup tomato sauce
- 1 tablespoon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- If not already done, cook and shred pork shoulder. Season lightly with salt and pepper.
- Heat olive oil in a skillet and sauté onions, garlic, and bell peppers until soft.
- Add shredded pork and tomato sauce to the skillet and mix well.
- In a baking dish, combine pork mixture with cooked rice and mustard. Mix evenly.
- Top with shredded cheese.
- Preheat oven to 375°F (190°C) and bake for 20–25 minutes until cheese is melted and bubbly.
- Let rest for a few minutes before serving.
