- 5 tbsp vegetable oil
- 3 pieces chicken breast fillets, chopped into bite-size chunks
- 2 pieces eggs, lightly beaten
- 3 tbsp cornflour (cornstarch)
- 10 tbsp plain (all-purpose) flour
- 0.5 tsp salt
- 0.5 tsp pepper
- 0.5 tsp garlic salt
- 2 tsp paprika
- 2 cloves garlic, peeled and minced
- 1 tbsp Chinese rice vinegar
- 2 tbsp honey
- 2 tbsp sweet chilli sauce
- 3 tbsp ketchup
- 2 tbsp brown sugar
- 4 tbsp soy sauce
- boiled rice
- 2 tbsp sesame seeds
- 1 bunch spring onions/scallions, chopped
Instructions
- Start by placing the eggs in one shallow bowl and cornflour in another. In a third bowl, mix the plain flour, salt, pepper, garlic salt, and paprika.
- Pour the vegetable oil into a wok or large frying pan. Heat it over medium-high until shimmering.
- Dredge a piece of chicken in cornflour, dip it in the beaten egg, then coat it with the seasoned flour mixture.
- Add the coated chicken to the hot oil in batches, cooking each side for about 6-7 minutes until golden brown.
- Once cooked, carefully remove the chicken and place it in a bowl lined with kitchen towels to drain excess oil.
- In the same wok, combine the minced garlic, rice vinegar, honey, sweet chili sauce, ketchup, brown sugar, and soy sauce. Stir well and let it bubble on high heat for 2-3 minutes.
- Adding the crispy chicken back to the wok, toss it in the sticky sauce until coated, cooking for another 1-2 minutes.
- Turn off the heat and divide the chicken among four bowls. Serve with fluffy boiled rice and top with sesame seeds and freshly chopped spring onions.
