Ingredients

  • 5 tbsp vegetable oil
  • 3 pieces chicken breast fillets, chopped into bite-size chunks
  • 2 pieces eggs, lightly beaten
  • 3 tbsp cornflour (cornstarch)
  • 10 tbsp plain (all-purpose) flour
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 0.5 tsp garlic salt
  • 2 tsp paprika
  • 2 cloves garlic, peeled and minced
  • 1 tbsp Chinese rice vinegar
  • 2 tbsp honey
  • 2 tbsp sweet chilli sauce
  • 3 tbsp ketchup
  • 2 tbsp brown sugar
  • 4 tbsp soy sauce
  • boiled rice
  • 2 tbsp sesame seeds
  • 1 bunch spring onions/scallions, chopped

Instructions

  1. Start by placing the eggs in one shallow bowl and cornflour in another. In a third bowl, mix the plain flour, salt, pepper, garlic salt, and paprika.
  2. Pour the vegetable oil into a wok or large frying pan. Heat it over medium-high until shimmering.
  3. Dredge a piece of chicken in cornflour, dip it in the beaten egg, then coat it with the seasoned flour mixture.
  4. Add the coated chicken to the hot oil in batches, cooking each side for about 6-7 minutes until golden brown.
  5. Once cooked, carefully remove the chicken and place it in a bowl lined with kitchen towels to drain excess oil.
  6. In the same wok, combine the minced garlic, rice vinegar, honey, sweet chili sauce, ketchup, brown sugar, and soy sauce. Stir well and let it bubble on high heat for 2-3 minutes.
  7. Adding the crispy chicken back to the wok, toss it in the sticky sauce until coated, cooking for another 1-2 minutes.
  8. Turn off the heat and divide the chicken among four bowls. Serve with fluffy boiled rice and top with sesame seeds and freshly chopped spring onions.
