Instructions
- Preheat your oven to 400°F (200°C).
- Wash and halve or quarter the baby potatoes.
- In a large bowl, toss the potatoes with olive oil.
- In a separate shallow dish, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, Italian herbs, salt, and pepper. This is your crispy Parmesan coating.
- Add the oiled potatoes to the Parmesan mixture. Toss well to ensure each potato piece is evenly coated with the crispy Parmesan crusted mixture.
- Spread the coated potatoes in a single layer on a baking sheet. Ensure they are not overcrowded for maximum crispiness.
- Bake for 25-35 minutes, or until the potatoes are tender inside and the Parmesan coating is golden brown and crispy. Flip them halfway through baking for even browning.
