Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, whisk together the almond flour, 1/2 cup erythritol, baking powder, and salt.
- Add the softened butter and egg, and mix until a dough forms.
- Roll the dough out between two sheets of parchment paper to a rectangle about 1/4 inch thick.
- In a separate bowl, combine the softened cream cheese, 2 tablespoons erythritol, and cinnamon. Mix until well blended.
- Spread the cream cheese mixture evenly over the dough, leaving a 1-inch border.
- Carefully roll up the dough, starting from the long side, to create a tight spiral.
- Cut the rolled dough into 1-inch slices and place them seam-side down on a parchment-lined baking sheet.
- Bake for 12-15 minutes, or until the roll-ups are golden brown and crispy.
