Ingredients

  • 1 pound (450g) salmon fillets, skinless
  • 2 cups cooked sushi rice (about 370g)
  • 4 ounces (115g) full-fat cream cheese, softened
  • ⅓ cup (80ml) mayonnaise (preferably Japanese mayo like Kewpie)
  • 2 tablespoons sriracha (adjust to taste)
  • 2 tablespoons low sodium soy sauce
  • 2 stalks green onions, thinly sliced
  • 1 cup (100g) shredded mozzarella or Monterey Jack cheese
  • 1 tablespoon toasted sesame seeds
  • 2 nori sheets, cut into small strips or crumbled (optional)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar

Instructions

  1. Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook it in a rice cooker or on the stove according to package instructions. Once cooked, transfer it to a large bowl.
  2. In a small bowl, whisk together 1 tablespoon rice vinegar and 1 teaspoon sugar until dissolved. Pour over the hot rice and gently fold to combine. Let it cool to room temperature.
  3. Preheat oven to 375°F (190°C). Lightly oil a skillet and cook the salmon fillets skinless for 3-4 minutes each side until just cooked through. Flake the salmon into bite-sized pieces with a fork.
  4. In a bowl, combine softened cream cheese, mayonnaise, sriracha, soy sauce, and sliced green onions. Mix until smooth and creamy.
  5. Spread the seasoned rice evenly in a 9×13-inch baking dish. Scatter the flaked salmon evenly over the rice. Dollop and spread the creamy spicy mixture on top, then sprinkle shredded mozzarella evenly over everything.
  6. Bake uncovered for 15-20 minutes until the cheese is bubbly and golden brown on top.
  7. Remove from oven and sprinkle toasted sesame seeds and crumbled nori strips on top. Let cool for 5 minutes before serving.
