- 1 pound (450g) salmon fillets, skinless
- 2 cups cooked sushi rice (about 370g)
- 4 ounces (115g) full-fat cream cheese, softened
- ⅓ cup (80ml) mayonnaise (preferably Japanese mayo like Kewpie)
- 2 tablespoons sriracha (adjust to taste)
- 2 tablespoons low sodium soy sauce
- 2 stalks green onions, thinly sliced
- 1 cup (100g) shredded mozzarella or Monterey Jack cheese
- 1 tablespoon toasted sesame seeds
- 2 nori sheets, cut into small strips or crumbled (optional)
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
Instructions
- Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook it in a rice cooker or on the stove according to package instructions. Once cooked, transfer it to a large bowl.
- In a small bowl, whisk together 1 tablespoon rice vinegar and 1 teaspoon sugar until dissolved. Pour over the hot rice and gently fold to combine. Let it cool to room temperature.
- Preheat oven to 375°F (190°C). Lightly oil a skillet and cook the salmon fillets skinless for 3-4 minutes each side until just cooked through. Flake the salmon into bite-sized pieces with a fork.
- In a bowl, combine softened cream cheese, mayonnaise, sriracha, soy sauce, and sliced green onions. Mix until smooth and creamy.
- Spread the seasoned rice evenly in a 9×13-inch baking dish. Scatter the flaked salmon evenly over the rice. Dollop and spread the creamy spicy mixture on top, then sprinkle shredded mozzarella evenly over everything.
- Bake uncovered for 15-20 minutes until the cheese is bubbly and golden brown on top.
- Remove from oven and sprinkle toasted sesame seeds and crumbled nori strips on top. Let cool for 5 minutes before serving.
