- 2 pounds boneless, skinless chicken breasts or thighs
- 2 cans (15 oz each) Great Northern beans or cannellini beans, drained and rinsed
- 1 can (4 oz) green chiles
- 3 cups chicken broth (low-sodium preferred)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 small jalapeño, seeded and chopped (optional)
- 2 teaspoons cumin
- 1 teaspoon oregano
- Salt and black pepper to taste
- 8 oz cream cheese, softened
- ½ cup sour cream or Greek yogurt (optional)
- 2 tablespoons fresh lime juice
- ½ cup chopped cilantro (optional)
Instructions
- Set your slow cooker to low heat (or high if short on time). Dice the onion, mince the garlic, and chop the jalapeño if using. Drain and rinse the beans.
- Place the chicken breasts or thighs at the bottom of the slow cooker. Sprinkle the diced onion, garlic, jalapeño, and green chiles on top.
- Sprinkle cumin, oregano, salt, and pepper evenly over everything. Pour the chicken broth over the top, ensuring the chicken is mostly covered. Stir gently.
- Cover and cook on low for 5-6 hours, or on high for 3-4 hours, until chicken is tender and shreds easily.
- Remove chicken and shred it directly in the slow cooker with two forks. Stir shredded chicken back into the broth and beans.
- Cut softened cream cheese into chunks and stir into the chili until melted and smooth. If desired, add sour cream or Greek yogurt and stir until combined.
- Squeeze in fresh lime juice and stir. Taste and adjust salt or spice as needed.
- Ladle into bowls and garnish with chopped cilantro. Optional toppings: avocado slices, shredded cheese, or a dollop of sour cream.
