Description

A cozy and creamy slow cooker white chicken chili with a subtle tropical twist, perfect for luau nights or any chilly evening.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 2 cans (15 oz each) Great Northern beans or cannellini beans, drained and rinsed
  • 1 can (4 oz) green chiles
  • 3 cups chicken broth (low-sodium preferred)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 small jalapeño, seeded and chopped (optional)
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • Salt and black pepper to taste
  • 8 oz cream cheese, softened
  • ½ cup sour cream or Greek yogurt (optional)
  • 2 tablespoons fresh lime juice
  • ½ cup chopped cilantro (optional)

Instructions

  1. Set your slow cooker to low heat (or high if short on time). Dice the onion, mince the garlic, and chop the jalapeño if using. Drain and rinse the beans.
  2. Place the chicken breasts or thighs at the bottom of the slow cooker. Sprinkle the diced onion, garlic, jalapeño, and green chiles on top.
  3. Sprinkle cumin, oregano, salt, and pepper evenly over everything. Pour the chicken broth over the top, ensuring the chicken is mostly covered. Stir gently.
  4. Cover and cook on low for 5-6 hours, or on high for 3-4 hours, until chicken is tender and shreds easily.
  5. Remove chicken and shred it directly in the slow cooker with two forks. Stir shredded chicken back into the broth and beans.
  6. Cut softened cream cheese into chunks and stir into the chili until melted and smooth. If desired, add sour cream or Greek yogurt and stir until combined.
  7. Squeeze in fresh lime juice and stir. Taste and adjust salt or spice as needed.
  8. Ladle into bowls and garnish with chopped cilantro. Optional toppings: avocado slices, shredded cheese, or a dollop of sour cream.
