Description

A festive and easy-to-assemble winter dessert featuring peppermint ice cream sandwiches layered with whipped cream and crushed candy canes for a creamy, minty treat.

  • About 12 peppermint-flavored ice cream sandwiches (vanilla can be used as a substitute)
  • 2 cups (480 ml) heavy whipping cream, cold and full-fat
  • ⅓ cup (40 g) powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup crushed candy canes or peppermint candy
  • Optional add-ins: mini chocolate chips, crushed Oreos, drizzle of dark chocolate

Instructions

  1. Prep your 9×13-inch pan by lining it with parchment paper or lightly greasing it. Soften ice cream sandwiches for about 5 minutes until pliable but not melting.
  2. Crush candy canes in a zip-top bag using a rolling pin or heavy pan until you have a mix of small chunks and fine powder. Set aside.
  3. Pour cold heavy cream into a chilled mixing bowl. Add powdered sugar and vanilla extract. Whip with an electric hand mixer or stand mixer on medium-high speed until soft peaks form.
  4. Place a single layer of ice cream sandwiches side-by-side in the pan, trimming edges if needed to fit snugly.
  5. Spread half of the whipped cream evenly over the ice cream sandwiches using a spatula.
  6. Add another layer of ice cream sandwiches on top of the whipped cream, pressing down lightly without squishing.
  7. Spread the remaining whipped cream over the top layer and sprinkle crushed candy canes generously on top.
  8. Cover the pan tightly with plastic wrap or foil and freeze for at least 4 hours or overnight until firm.
  9. Slice with a sharp knife dipped in hot water and wiped dry for clean cuts. Serve immediately.
