- About 12 peppermint-flavored ice cream sandwiches (vanilla can be used as a substitute)
- 2 cups (480 ml) heavy whipping cream, cold and full-fat
- ⅓ cup (40 g) powdered sugar
- 1 teaspoon vanilla extract
- ½ cup crushed candy canes or peppermint candy
- Optional add-ins: mini chocolate chips, crushed Oreos, drizzle of dark chocolate
Instructions
- Prep your 9×13-inch pan by lining it with parchment paper or lightly greasing it. Soften ice cream sandwiches for about 5 minutes until pliable but not melting.
- Crush candy canes in a zip-top bag using a rolling pin or heavy pan until you have a mix of small chunks and fine powder. Set aside.
- Pour cold heavy cream into a chilled mixing bowl. Add powdered sugar and vanilla extract. Whip with an electric hand mixer or stand mixer on medium-high speed until soft peaks form.
- Place a single layer of ice cream sandwiches side-by-side in the pan, trimming edges if needed to fit snugly.
- Spread half of the whipped cream evenly over the ice cream sandwiches using a spatula.
- Add another layer of ice cream sandwiches on top of the whipped cream, pressing down lightly without squishing.
- Spread the remaining whipped cream over the top layer and sprinkle crushed candy canes generously on top.
- Cover the pan tightly with plastic wrap or foil and freeze for at least 4 hours or overnight until firm.
- Slice with a sharp knife dipped in hot water and wiped dry for clean cuts. Serve immediately.
