- 1.5 pounds boneless skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves minced garlic
- 1/4 cup chopped sun-dried tomatoes (oil-packed preferred)
- 3 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1 cup orzo pasta
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon red pepper flakes
- 1/2 cup chopped fresh basil
- Salt and black pepper to taste
Instructions
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper on both sides. Add to skillet and cook until golden brown, about 5-6 minutes per side. Remove chicken and set aside.
- Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the same pan. Stir constantly for about 2 minutes until fragrant, being careful not to burn the garlic.
- Pour in 3 cups chicken broth and 1/2 cup heavy cream. Stir, scraping up any browned bits from the chicken. Add 1 cup orzo pasta and 1/2 teaspoon red pepper flakes. Stir well to combine.
- Nestle the seared chicken breasts back into the skillet, pressing them slightly into the liquid. Cover with lid and reduce heat to low. Simmer gently for about 20 minutes, stirring once halfway through, until orzo is tender and chicken is cooked through.
- Remove lid, sprinkle 1/2 cup grated Parmesan cheese over the dish, and stir well to create a creamy sauce. Add chopped fresh basil and adjust salt and pepper to taste. Let sit uncovered for a minute to thicken the sauce slightly.
- Slice chicken breasts against the grain. Serve the creamy orzo topped with chicken slices and garnish with extra basil or Parmesan if desired.

- You can adjust the spice level by adding more or less red pepper flakes.
