- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup sliced mushrooms (button or cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded Asiago cheese
- 1 teaspoon dried thyme
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and sauté for 3-4 minutes until they are tender.
- Stir in the minced garlic and cook for an additional minute, ensuring it doesn’t burn.
- Pour in the heavy cream, stirring to combine. Bring to a simmer.
- Add the shredded Asiago cheese, dried thyme, and Italian seasoning. Stir until the cheese is melted and the sauce is thickened.
- Place the seared chicken back into the skillet, coating it in the creamy sauce.
- Let the chicken simmer in the sauce for about 5 minutes to absorb the flavors.
- Remove from heat, garnish with fresh parsley, and serve warm.
