- 1 cup (200g) red lentils, rinsed
- 1 medium yellow onion, diced
- 1 large carrot, diced
- 3 garlic cloves, minced
- 1 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 4 cups (32 fl oz / 960 ml) vegetable broth, low-sodium preferred
- Juice of 1 large lemon (about 3 tablespoons), plus zest if desired
- 2 tablespoons extra virgin olive oil
- 1/2 cup (4 fl oz / 120 ml) full-fat coconut milk
- Salt, to taste
- Black pepper, to taste
- Fresh parsley or cilantro, chopped (optional, for garnish)
Instructions
- Heat olive oil in a medium to large pot over medium heat. Dice onion and carrot, mince garlic, and rinse lentils while oil warms.
- Add diced onion and carrot to the pot. Stir occasionally until onion is translucent and carrots soften, about 4-5 minutes. Add minced garlic, turmeric, and cumin seeds. Stir for 1-2 minutes until fragrant.
- Pour in rinsed red lentils and vegetable broth. Stir to combine.
- Bring soup to a gentle boil, then reduce heat to low and cover. Simmer for about 20 minutes until lentils are soft, stirring occasionally to prevent sticking.
- Use an immersion blender to puree about half the soup until creamy but still slightly chunky. If using a regular blender, carefully blend half in batches and return to pot.
- Stir in coconut milk and fresh lemon juice. Season with salt and black pepper to taste. Add a splash of broth or water if soup is too thick.
- Let soup warm through for 1-2 minutes. Ladle into bowls and garnish with chopped parsley or cilantro if desired. Serve warm or at room temperature.
