  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add your gnocchi and cook according to package instructions until they float to the surface, about 3 minutes. Drain and set aside.
  2. In a large skillet over medium heat, pour in the olive oil. Once hot, add the minced garlic and sauté for about a minute or until fragrant.
  3. Add the fresh spinach to the skillet and cook for another 2-3 minutes until it wilts.
  4. Pour the heavy cream into the skillet, bring it to a gentle simmer, and stir in the crumbled feta cheese.
  5. Add the drained gnocchi to the skillet and gently toss until well combined. Season with salt and pepper.
  6. Spoon your creamy gnocchi into bowls and top with freshly grated Parmesan if desired.
