A cozy, creamy, and gluten-free lasagna soup made effortlessly in a crockpot, perfect for chilly nights and easy weeknight dinners.

- 8 oz gluten-free pasta (brown rice or chickpea-based penne recommended)
- 1 lb ground beef (80/20 preferred)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 28 oz crushed tomatoes (canned, preferably San Marzano)
- 2 tbsp tomato paste
- 1 cup full-fat cottage cheese
- ½ cup freshly grated Parmesan cheese
- 2 tsp Italian seasoning (oregano, basil, thyme, rosemary blend)
- ½ tsp red pepper flakes (optional)
- 4 cups low-sodium vegetable or beef broth
- Salt and pepper to taste
- A handful fresh basil, chopped
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until no longer pink (about 7 minutes). Drain excess fat if needed.
- Add diced onion and minced garlic to the skillet and sauté until softened and fragrant (2-3 minutes).
- Transfer the beef mixture to the crockpot. Add crushed tomatoes, tomato paste, Italian seasoning, red pepper flakes (if using), broth, salt, and pepper. Stir to combine.
- Add gluten-free pasta now if using sturdy pasta like penne or rigatoni. For delicate pasta, add during the last 30 minutes of cooking.
- Cover and cook on low for 4-5 hours, checking pasta texture starting at 3.5 hours to avoid mushiness.
- Blend the cottage cheese in a blender or food processor until smooth.
- About 20 minutes before serving, stir the blended cottage cheese and grated Parmesan into the crockpot. Mix well and let warm through. Add broth or water if soup is too thick.
- Taste and adjust seasoning. Stir in chopped fresh basil just before serving. Optionally, use an immersion blender for a smoother texture.
- Ladle into bowls and serve with extra Parmesan and fresh basil if desired.
