- 1 pound boneless (skinless chicken breasts)
- 1 can (15 oz white beans (such as cannellini or great northern), drained and rinsed)
- 1 can (15 oz corn, drained)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 can (4 oz diced green chilies)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- 4 cups chicken broth
- 1 cup heavy cream or half-and-half
- Fresh cilantro (chopped (for garnish))
- Optional: lime wedges and shredded cheese for serving
Instructions
- Place the boneless, skinless chicken breasts at the bottom of the crockpot.
- Layer the white beans, corn, diced onion, minced garlic, diced green chilies, cumin, chili powder, smoked paprika, salt, and black pepper over the chicken.
- Carefully pour the chicken broth over all the ingredients in the crockpot.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Once cooked, remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the pot.
- Stir in the heavy cream or half-and-half to create a creamy texture. Mix well to combine all the flavors.
- Taste the chili and adjust the seasoning if necessary.
- Ladle the chili into bowls and garnish with fresh cilantro. Serve with lime wedges and shredded cheese if desired.
