Ingredients

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 packet ranch seasoning mix (1 oz)
- 1 cup chicken broth
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup milk (optional)
- salt and black pepper (to taste)
Instructions
- Pat the chicken dry with paper towels. Season with salt and black pepper. Place in the slow cooker.
- Sprinkle the ranch seasoning mix over the chicken.
- Pour the chicken broth around the chicken.
- Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours.
- Add the softened cream cheese on top of the chicken.
- Cook on HIGH for another 30 minutes.
- Remove the chicken and shred it with two forks.
- Return the shredded chicken to the slow cooker. Stir in cheddar cheese and milk if using.
- Taste and adjust seasoning if needed.
- Serve hot over rice, pasta, mashed potatoes, or in sandwiches.
