- 1 sheet puff pastry, thawed
- 8 oz camembert cheese, cut into small pieces
- 1 cup fresh or frozen cranberries
- 1/4 cup granulated sugar
- 1/4 cup shelled pistachios, chopped
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry into a large rectangle, about 12×16 inches.
- In a small saucepan, combine the cranberries and sugar. Cook over medium heat, stirring occasionally, until the cranberries have burst and the mixture has thickened, about 10 minutes. Remove from heat and let cool slightly.
- Spread the camembert pieces evenly over the puff pastry, leaving a 1-inch border. Top with the cooked cranberry mixture.
- Starting from one long side, tightly roll up the puff pastry into a log. Slice the log diagonally into 1-inch thick pieces, arranging them in a Christmas tree shape on the prepared baking sheet.
- Sprinkle the chopped pistachios over the top of the puff pastry.
- Bake for 18-20 minutes, or until the pastry is golden brown. Serve warm.
