- 1 tablespoon olive oil
- 1 small onion
- 1/2 bell pepper
- 2 cups fresh baby spinach
- 1 1/2 cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- Garlic powder and Italian seasoning for flavor
Instructions
- Warm 1 tbsp of olive oil in a skillet over medium heat.
- Add finely chopped onion and sauté until golden, about 5-7 minutes.
- Toss in chopped spinach and wilt for a few minutes, then remove from heat.
- In a bowl, combine 1 cup cottage cheese, 4 eggs, and 1/2 cup milk; whisk until smooth.
- Stir in the spinach and onion mixture, 1 cup shredded cheese, and season with nutmeg, salt, and pepper.
- Preheat oven to 375°F (190°C) and grease a pie dish or quiche pan.
- Pour the mixture into the prepared dish and spread evenly with a spatula.
- Bake for 30-35 minutes until golden and a knife inserted comes out clean.
- Let the quiche rest for 10 minutes before slicing.
- Serve warm, optionally with yogurt or fresh herbs.
- Store leftovers in an airtight container in the refrigerator for up to three days.
- Reheat individual slices in the microwave or oven until warmed through.
