Ingredients

  • 1/2 bell pepper
  • 2 cups fresh baby spinach
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • Garlic powder and Italian seasoning for flavor

Instructions

  1. Warm 1 tbsp of olive oil in a skillet over medium heat.
  2. Add finely chopped onion and sauté until golden, about 5-7 minutes.
  3. Toss in chopped spinach and wilt for a few minutes, then remove from heat.
  4. In a bowl, combine 1 cup cottage cheese, 4 eggs, and 1/2 cup milk; whisk until smooth.
  5. Stir in the spinach and onion mixture, 1 cup shredded cheese, and season with nutmeg, salt, and pepper.
  6. Preheat oven to 375°F (190°C) and grease a pie dish or quiche pan.
  7. Pour the mixture into the prepared dish and spread evenly with a spatula.
  8. Bake for 30-35 minutes until golden and a knife inserted comes out clean.
  9. Let the quiche rest for 10 minutes before slicing.
  10. Serve warm, optionally with yogurt or fresh herbs.
  11. Store leftovers in an airtight container in the refrigerator for up to three days.
