Description

This recipe makes dumpling wrappers that are perfect for potstickers.


Ingredients

  • 320 grams all-purpose flour (2 1/4 cups using dip-and-sweep method; 2 2/3 using spoon-and-sweep method)
  • 175 grams (3/4 cup/175ml) very warm water (between 110ºF to 130ºF)

Instructions

  1. Pour all the flour and water into a mixing bowl. Use chopsticks or a wooden spoon to stir everything together until shaggy pieces of dough form.
  2. Gather the dough with your hands, using your fingers to dig into it to distribute moisture.
  3. Knead the dough on a surface for 2 to 3 minutes. It should be slightly tacky but not sticky.
  4. Form a smooth ball of dough and place it back in the bowl, covering it with a damp towel.
  5. Let the dough rest for at least 45 minutes for better texture.
  6. After resting, knead the dough a few times and create a hole in the center, stretching it into a ring.
  7. Cut the dough into a thick rope and roll it to about 1 1/2 inches in diameter.
  8. Cut out 5 small pieces of dough, each weighing 12 to 13 grams.
  9. Roll each piece into a ball and flatten it into a disc about 1 1/2 inches in diameter.
  10. Use a rolling pin to roll out each disc, rotating it 90 degrees after each roll.
  11. For the third roll, only roll halfway to keep the center thicker than the edges.
  12. For the final roll, focus on the edges, achieving a diameter of about 3 1/4 to 3 1/2 inches.
  13. Brush flour over the wrapper, set aside, and cover with a dry towel.
  14. Repeat rolling for the remaining discs and use them to make dumplings.
  15. To store wrappers, brush with potato or tapioca starch, stack, wrap tightly with plastic, and refrigerate or freeze.

  • For larger dumplings, adjust dough piece sizes to 14 to 16 grams.
  • Wraps dry out quickly; keep covered.
