Description
Pelmeni are a must-try traditional Russian meal. These tender dumplings are filled with juicy meat and cooked in boiled water. They are ideal for meal prep and can be frozen for later use.

- 4 cups all-purpose flour
- 1 large egg
- 1 cup whole milk
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 pound ground pork
- 1 pound ground beef
- 1 medium onion (grated with juices)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large mixing bowl, whisk together an egg, milk, water, salt, and sugar. Add half of the all-purpose flour and fold it in with a spatula. Then add the rest of the flour and mix.
- Transfer the dough to a counter and knead for about 7-10 minutes, until the dough is soft and elastic. Wrap it with plastic wrap and let it rest for about 40-50 minutes.
- In another mixing bowl, combine ground pork, ground beef, grated onion, salt, and pepper. Mix until evenly combined.
- When the dough is ready, knead it again until soft and elastic, adding more flour if needed. Cut a piece of the dough (about the size of an apple) and roll it out to about ¼-inch thin.
- Cut circles from the dough using a glass or a special cutter. Place about 1 teaspoon of the meat mixture in each circle and shape the pelmeni.
- You can cook the pelmeni right away or freeze them. Cooking times are the same for fresh or frozen pelmeni.
- Boil a large pot of water over high heat. When boiling, add the pelmeni and stir to prevent sticking. Cook for about 10 minutes or until the dumplings float.
- Scoop them out with a strainer ladle or drain like pasta.
Notes
- Pelmeni can be frozen for later use.
- Cooking time remains the same for fresh and frozen pelmeni.
