Description
Pelmeni are a traditional Russian dish, similar to dumplings, filled with meat and wrapped in dough.
Ingredients

- 4 cups all-purpose flour
- 1 large egg
- 1 cup whole milk
- 1/2 cup water
- 1 teaspoon salt
- 1 teaspoon granulated sugar
- 1 pound ground pork
- 1 pound ground beef
- 1 medium onion (grated with juices)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large mixing bowl, whisk together egg, milk, water, salt, and sugar. Add half of the flour and fold it in. Then add the rest of the flour and mix.
- Transfer the dough to a counter and knead for about 7-10 minutes, until soft and elastic. Wrap it in plastic wrap and let it rest for about 40-50 minutes.
- In another bowl, combine ground pork, ground beef, grated onion, salt, and pepper. Mix until evenly combined.
- When the dough is ready, knead it again, adding more flour as needed. Cut a piece of dough and roll it out to about ¼-inch thick.
- Cut circles from the dough using a glass or cutter. Place about 1 teaspoon of meat mixture in each circle and shape the pelmeni.
- Cook pelmeni immediately or freeze for later use. Cooking technique and timing remain the same.
- Boil a large pot of water. Add pelmeni and stir to prevent sticking. Cook for about 10 minutes or until they float.
- Scoop out with a strainer ladle or drain like pasta.
Notes
- Pelmeni can be frozen for later cooking.
- Cook from frozen in the same way as fresh pelmeni.
- Serve with sour cream or your favorite sauce.
