Description

Pelmeni are a must-try traditional Russian meal. These dumplings are filled with meat and wrapped in dough, cooked in boiling water.

Ingredients

Scale
  • 4 cups all-purpose flour
  • 1 large egg
  • 1 cup whole milk
  • 1/2 cup water
  • 1 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 medium onion (grated with juices)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large mixing bowl, whisk together an egg, milk, water, salt, and sugar. Add half of the all-purpose flour and fold it in.
  2. Add the rest of the flour and mix.
  3. Transfer the dough to a counter and knead for about 7-10 minutes, until soft and elastic. Wrap it with plastic wrap and let it rest for about 40-50 minutes.
  4. In another bowl, mix ground pork, ground beef, grated onion, salt, and pepper until combined.
  5. When the dough is ready, knead it again and roll it until about ¼-inch thin.
  6. Cut circles from the dough using a glass. Place about 1 teaspoon of meat mixture in each circle and shape the pelmeni.
  7. Cook them fresh or freeze them. Boil a large pot of water over high heat.
  8. Add pelmeni to boiling water, stirring to prevent sticking. Cook for about 10 minutes or until they float.
  9. Scoop them out with a strainer ladle or drain like pasta.

Notes

  • Pelmeni can be frozen for later use.
  • Cooking time remains the same for fresh and frozen pelmeni.
  • Serve with sour cream or butter for added flavor.
