- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 2 cups broccoli florets
- 1.5 cups milk
- 1.5 cups shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional toppings: cooked bacon, sour cream, chives
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Pour in chicken broth and add diced potatoes. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until potatoes are tender.
- Add broccoli florets to the pot. Cook for 5-7 minutes, until broccoli is tender-crisp.
- Stir in milk and shredded cheddar cheese. Cook, stirring constantly, until cheese is melted and soup is heated through. Do not boil.
- Season with salt and pepper.
- Serve hot, with optional toppings if desired.
Notes
- For a creamier soup, you can blend half of the soup before adding the cheese.
- Adjust the amount of cheese to your preference.
