  • 1 lb boneless skinless chicken breasts
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt (more to taste)
  • ¼ tsp black pepper
  • 1 cup corn (frozen or canned)
  • 1 lime, juice
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: avocado, sour cream, shredded cheese

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the drained white beans, diced tomatoes (with their juices), diced onion, minced garlic, and diced bell pepper on top of the chicken.
  3. Pour in the chicken broth and add the cumin, chili powder, smoked paprika, salt, and black pepper. Stir gently to combine the ingredients.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  5. Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
  6. Stir in the corn and lime juice, and let it heat through for an additional 10-15 minutes.
  7. Taste and adjust the seasoning, adding more salt or spices if needed.
  8. Serve hot, garnished with fresh cilantro and your choice of optional toppings like avocado, sour cream, or shredded cheese.
