- 1 lb boneless skinless chicken breasts
- 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 cup low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp salt (more to taste)
- ¼ tsp black pepper
- 1 cup corn (frozen or canned)
- 1 lime, juice
- Fresh cilantro, chopped (for garnish)
- Optional toppings: avocado, sour cream, shredded cheese
Instructions
- Place the chicken breasts at the bottom of the crockpot.
- Add the drained white beans, diced tomatoes (with their juices), diced onion, minced garlic, and diced bell pepper on top of the chicken.
- Pour in the chicken broth and add the cumin, chili powder, smoked paprika, salt, and black pepper. Stir gently to combine the ingredients.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the crockpot.
- Stir in the corn and lime juice, and let it heat through for an additional 10-15 minutes.
- Taste and adjust the seasoning, adding more salt or spices if needed.
- Serve hot, garnished with fresh cilantro and your choice of optional toppings like avocado, sour cream, or shredded cheese.
