  • 2 tbsp Ground Coffee
  • 2 tbsp Brown Sugar
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Pat the prime rib dry with paper towels to remove moisture.
  3. In a bowl, combine ground coffee, brown sugar, garlic powder, salt, and pepper.
  4. Drizzle olive oil over the roast and rub it evenly across the surface.
  5. Generously apply the coffee rub mixture all over the prime rib for an even coat.
  6. Place the roast on a rack in a roasting pan. Roast at 450°F for 20 minutes; then reduce to 325°F (163°C) and cook for about an hour and a half until reaching medium-rare doneness (135°F internal temperature).
  7. Allow the roast to rest for at least 20 minutes before slicing.
