- 2 tbsp Brown Sugar
- 1 tsp Garlic Powder
- 1 tsp Salt
- 1 tsp Black Pepper
- 2 tbsp Olive Oil
Instructions
- Preheat your oven to 450°F (232°C).
- Pat the prime rib dry with paper towels to remove moisture.
- In a bowl, combine ground coffee, brown sugar, garlic powder, salt, and pepper.
- Drizzle olive oil over the roast and rub it evenly across the surface.
- Generously apply the coffee rub mixture all over the prime rib for an even coat.
- Place the roast on a rack in a roasting pan. Roast at 450°F for 20 minutes; then reduce to 325°F (163°C) and cook for about an hour and a half until reaching medium-rare doneness (135°F internal temperature).
- Allow the roast to rest for at least 20 minutes before slicing.
