Ingredients

  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 packet (2¼ teaspoons) active dry yeast
  • 1½ cups warm water
  • 1 cup raisins
  • 1 tablespoon malt syrup (optional)
  • Sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Mix the warm water, active dry yeast, and sugar in a large bowl and let it sit for about 5 minutes until bubbly.
  2. Combine the bread flour, salt, and cinnamon in a separate bowl.
  3. Add the dry mixture into the yeast mixture and stir until a rough dough forms.
  4. Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.
  5. Incorporate the raisins and knead until evenly distributed.
  6. Place the dough in a greased bowl, cover it, and let it rise until doubled in size, about 1 hour.
  7. Preheat your oven to 425°F (220°C).
  8. Bring water in a large pot to a boil and stir in malt syrup if using.
  9. Punch down the dough gently, divide it into 8 pieces, and shape each into a bagel.
  10. Boil each bagel for 1-2 minutes on each side.
  11. Transfer boiled bagels to a baking sheet, sprinkle with toppings if desired, and bake for 20-25 minutes until golden brown.
  12. Allow to cool on a wire rack before serving.
