- 1 teaspoon baking powder (Check freshness)
- ½ teaspoon baking soda (Check freshness)
- 1 teaspoon ground cinnamon (Optional but recommended)
- ½ cup dairy-free dark chocolate chips (Optional for extra chocolate flavor)
Instructions
- Preheat your oven to 350°F (180°C). Prepare a 9×5 inch loaf pan by lining it with parchment paper and lightly greasing the sides.
- Mash 1 ½ cups of ripe bananas in a large bowl until very runny.
- Mix together the peanut butter, olive oil, and vanilla extract into the mashed bananas until smooth.
- Combine almond milk, coconut sugar, and a pinch of salt into the bowl and blend thoroughly.
- Whisk together the flour, cocoa powder, baking powder, baking soda, and ground cinnamon in another bowl.
- Fold the dry mixture gently into the wet ingredients until just combined.
- Optional: Fold in dairy-free dark chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes.
- Cover the loaf with foil after 30 minutes of baking if necessary.
- Cool the bread on a wire rack for 2-3 hours before slicing.
