Delicious Chinese Meat Pie: A Flavorful Homemade Twist

- 3 cups all-purpose flour
- 0.5 cups boiling water
- 0.5 cups room temperature water
- 1 pound ground pork
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon sugar
- 0.25 teaspoon salt
- 1 pinch five spice powder
- 3 tablespoons neutral oil
- 2 cups finely chopped scallions
Instructions
- In a large mixing bowl, add the flour and level it off. Slowly incorporate ½ cup of boiling water into half of the flour, mixing with chopsticks or a spatula. Mix the other half with ½ cup of room temperature water.
- Combine the two mixtures by hand, kneading for a few minutes until you have a rough dough ball. If it feels stiff, add 1-2 tablespoons of warm water. Cover and let rest at room temperature for 1 hour.
- In a separate bowl, combine ground pork with light soy sauce, dark soy sauce, Shaoxing wine, sugar, salt, and optional five spice powder. Stir in oil until well-combined, then mix in the scallions.
- Take the rested dough, knead it a few times, and cut in half. Roll out one half into an 8×24 inches (20x61cm) sheet on a floured surface.
- Spread half the filling over the dough, keeping a ½-inch (1cm) border. Fold the dough over the filling, pinching the seam and ends to seal the pie closed.
- Brush a nonstick pan with oil over medium heat. Place the seam-side down pie in the pan, gently pressing the top. Cover and cook for 8 minutes, flip and cook another 8 minutes until golden brown and slightly puffed.
- Transfer the meat pie to a cutting board, cutting it into halves or thirds for serving. Repeat with the rest of the dough and filling for a second pie.
- Optional: Serve with a side of soy sauce for dipping.
Notes
- Adjust the filling spices to your taste.
- Make sure to seal the edges well to prevent filling from leaking.
- These pies can be frozen before cooking for later use.
