Ingredients

- 3 bell peppers, sliced (any color)
- 1 large yellow or red onion, sliced
- 3–4 cloves garlic, minced
- 3 tablespoons olive oil, divided
- Juice of 1–2 limes, to taste
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1½ teaspoons smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- Pinch cayenne pepper (optional)
Instructions
- Warm flour or corn tortillas.
- Prepare cilantro-lime rice or plain rice.
- Gather lettuce for fajita bowls.
