  • 8 ounces pre-cooked chicken sausage, sliced into 1/4 to 1/2-inch pieces
  • 2 to 3 cups broccoli florets, roughly chopped
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon minced garlic
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup shredded Parmesan cheese

Instructions

  1. Heat a large skillet over medium-high heat. Add a generous drizzle of olive oil. Once hot, add the sliced chicken sausage. Cook for 2 to 3 minutes on one side until browned, then flip each slice and cook for an additional minute or so to achieve browning on the other side.
  2. Add the roughly chopped broccoli to the skillet with the chicken sausage. Season with a generous pinch of kosher salt and ground black pepper. Continue to cook for approximately 5 minutes, stirring occasionally, until the broccoli turns bright green and is slightly tender-crisp.
  3. Stir in the minced garlic and uncooked orzo pasta with the chicken sausage and broccoli. Cook for about 1 minute, stirring frequently, to lightly toast the orzo and release the garlic’s aroma.
  4. Pour in the chicken broth and stir to combine all ingredients thoroughly. Bring the mixture to a boil. Reduce the heat to low, cover the skillet, and simmer gently for 10 to 15 minutes, or until the orzo pasta is tender and has absorbed most of the liquid.
  5. Once all the liquid has been absorbed, remove the skillet from heat. Stir in the shredded Parmesan cheese until it has melted and is well incorporated, creating a creamy texture. Serve immediately, garnished with additional Parmesan cheese if desired.
