Ingredients

  • 3 medium boneless skinless chicken breasts
  • 2 teaspoons Italian blend seasoning (or Herbs de Provence)
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 tablespoons olive oil (divided)
  • ½ pound baby potatoes, halved or quartered
  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • 1 cup low sodium chicken broth
  • 2 tablespoons Dijon mustard
  • 1 cup heavy cream
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon cracked black pepper (or to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine chicken breasts and baby potatoes. Drizzle with 1 tablespoon of olive oil and toss to coat. Season with salt, pepper, and Italian seasoning.
  3. Heat a large skillet over medium heat, melt 2 tablespoons of butter, and add 1 tablespoon olive oil. Cook chicken on one half and potatoes on the other for 3-4 minutes until browned. Flip and cook for another 3-4 minutes until golden brown. Remove and cover to keep warm.
  4. In the same skillet, melt 1 tablespoon of butter. Add minced garlic and cook for 1 minute. Pour in chicken broth and whisk in Dijon mustard and heavy cream. Season with salt and cracked black pepper.
  5. Return chicken and potatoes to the skillet, coating them with the sauce. Transfer to the oven and bake for 15-20 minutes until chicken is cooked through and potatoes are fork-tender.
  6. Spoon additional sauce over the dish and garnish with cracked black pepper and herbs. Serve hot.
