- 3 medium boneless skinless chicken breasts
- 2 teaspoons Italian blend seasoning (or Herbs de Provence)
- Salt and pepper to taste
- 2 tablespoons butter
- 2 tablespoons olive oil (divided)
- ½ pound baby potatoes, halved or quartered
- 1 tablespoon butter
- 1 teaspoon minced garlic
- 1 cup low sodium chicken broth
- 2 tablespoons Dijon mustard
- 1 cup heavy cream
- ½ teaspoon salt (or to taste)
- ¼ teaspoon cracked black pepper (or to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine chicken breasts and baby potatoes. Drizzle with 1 tablespoon of olive oil and toss to coat. Season with salt, pepper, and Italian seasoning.
- Heat a large skillet over medium heat, melt 2 tablespoons of butter, and add 1 tablespoon olive oil. Cook chicken on one half and potatoes on the other for 3-4 minutes until browned. Flip and cook for another 3-4 minutes until golden brown. Remove and cover to keep warm.
- In the same skillet, melt 1 tablespoon of butter. Add minced garlic and cook for 1 minute. Pour in chicken broth and whisk in Dijon mustard and heavy cream. Season with salt and cracked black pepper.
- Return chicken and potatoes to the skillet, coating them with the sauce. Transfer to the oven and bake for 15-20 minutes until chicken is cooked through and potatoes are fork-tender.
- Spoon additional sauce over the dish and garnish with cracked black pepper and herbs. Serve hot.
