  • 1 cup (220 g) brown sugar
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon cornstarch
  • 1 cup (140 g) all-purpose flour
  • ½ cup (118.29 g) M&M’s (heaping ½ cup)
  • ½ cup (90 g) chocolate chips
  • Flaked salt for sprinkling

Instructions

  1. In a medium saucepan over medium heat, melt ½ cup of salted butter. Continue cooking past the boiling point, stirring frequently, until the butter foams and then turns a golden brown color with a nutty aroma. Watch carefully to avoid burning. Once browned, pour into a bowl and allow to cool.
  2. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and lightly coat with cooking spray to prevent sticking.
  3. In a medium bowl, whisk together the cooled browned butter and brown sugar until well combined. Add the egg, egg yolk, and vanilla extract, mixing thoroughly until the batter is smooth and uniform.
  4. Stir in the cornstarch, salt, and all-purpose flour until just combined. Be careful not to overmix to keep the blondies tender.
  5. Gently fold in the M&M’s and chocolate chips evenly throughout the batter, reserving a few for topping.
  6. Pour the batter into the prepared pan and use a spatula to spread and smooth the surface evenly. Sprinkle the reserved M&M’s and flaked salt evenly over the top.
  7. Bake in the preheated oven for 20-23 minutes, or until the edges turn light golden brown. The center should still be slightly soft to ensure chewiness.
  8. Remove from oven and allow the blondies to cool completely in the pan before slicing into 16 pieces. This allows them to set for the perfect chewy texture.
