- 2 cups mashed potatoes
- 2 eggs, beaten
- 1/2 cup sour cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped chives
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Butter (for greasing muffin tin)
Instructions
- Preheat your oven to 400°F (200°C). Grease a standard muffin tin with butter or non-stick spray.
- In a large bowl, mix mashed potatoes, eggs, sour cream, cheddar, and Parmesan until smooth.
- Stir in salt, pepper, and chopped chives evenly.
- Spoon mixture into the muffin tin, filling each cup nearly to the top.
- Sprinkle extra cheddar and chives on top for a golden finish.
- Bake for 25–30 minutes or until puffed and golden brown.
- Let them cool in the tin for 5 minutes before removing. Serve warm or at room temperature.

- These puffs can be made with leftover mashed potatoes.
