Description

Ingredients

  • 500 g cheese tortellini (fresh or refrigerated)
  • 1 bunch asparagus (about 300350 g, trimmed and cut into 34 cm pieces)
  • 2 tbsp unsalted butter
  • 3 cloves garlic (minced)
  • 2 tbsp all-purpose flour
  • 1 ½ cups milk
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ½ tsp dried Italian herbs (or oregano)
  • ¼ tsp chili flakes (optional)
  • ½ cup shredded mozzarella
  • 2 tbsp grated Parmesan

Instructions

  1. Preheat & Prep
  2. Heat oven to 180°C (350°F).
  3. Lightly grease a medium baking dish.
  4. Cook Tortellini
  5. Bring salted water to a boil.
  6. Cook tortellini according to package instructions (usually 3–5 minutes).
  7. Drain and set aside.
  8. Blanch the Asparagus
  9. Add asparagus pieces to boiling water for 2 minutes.
  10. Transfer immediately to cold water to keep them bright and crisp.
  11. Drain well.
  12. Make the Creamy Sauce
  13. Melt butter in a saucepan over medium heat.
  14. Add garlic and cook for about 1 minute until fragrant.
  15. Stir in flour and whisk continuously for 1 minute.
  16. Slowly pour in milk, whisking to avoid lumps.
  17. Add cream and cook until slightly thickened.
  18. Stir in mozzarella and Parmesan until smooth.
  19. Season with salt, pepper, herbs, and chili flakes.
  20. Assemble
  21. Combine tortellini and asparagus in the baking dish.
  22. Pour sauce over and gently mix to coat evenly.
  23. Sprinkle remaining mozzarella and Parmesan on top.
  24. Bake
  25. Bake uncovered for 20–25 minutes, until bubbly and lightly golden.
  26. Rest & Serve
  27. Let it sit for 5 minutes before serving.
  28. Serve warm.
