This Cheesy Asparagus Tortellini Bake is creamy, rich, and packed with tender pasta, fresh asparagus, and melted cheese. It’s an easy, oven-baked dinner, perfect for busy weeknights.

- 500 g cheese tortellini (fresh or refrigerated)
- 1 bunch asparagus (about 300–350 g, trimmed and cut into 3–4 cm pieces)
- 2 tbsp unsalted butter
- 3 cloves garlic (minced)
- 2 tbsp all-purpose flour
- 1 ½ cups milk
- ½ cup heavy cream
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ½ tsp dried Italian herbs (or oregano)
- ¼ tsp chili flakes (optional)
- ½ cup shredded mozzarella
- 2 tbsp grated Parmesan
Instructions
- Preheat & Prep
- Heat oven to 180°C (350°F).
- Lightly grease a medium baking dish.
- Cook Tortellini
- Bring salted water to a boil.
- Cook tortellini according to package instructions (usually 3–5 minutes).
- Drain and set aside.
- Blanch the Asparagus
- Add asparagus pieces to boiling water for 2 minutes.
- Transfer immediately to cold water to keep them bright and crisp.
- Drain well.
- Make the Creamy Sauce
- Melt butter in a saucepan over medium heat.
- Add garlic and cook for about 1 minute until fragrant.
- Stir in flour and whisk continuously for 1 minute.
- Slowly pour in milk, whisking to avoid lumps.
- Add cream and cook until slightly thickened.
- Stir in mozzarella and Parmesan until smooth.
- Season with salt, pepper, herbs, and chili flakes.
- Assemble
- Combine tortellini and asparagus in the baking dish.
- Pour sauce over and gently mix to coat evenly.
- Sprinkle remaining mozzarella and Parmesan on top.
- Bake
- Bake uncovered for 20–25 minutes, until bubbly and lightly golden.
- Rest & Serve
- Let it sit for 5 minutes before serving.
- Serve warm.
