- 2 cups shredded cooked chicken (rotisserie chicken recommended)
- 8 oz egg noodles
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups freshly shredded sharp cheddar cheese
- 1 medium onion, diced
- 2 carrots, thinly sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 tbsp butter
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add egg noodles and cook for 8 minutes until tender.
- Reduce heat to low. Stir in shredded chicken and heavy cream.
- Gradually add cheddar cheese, stirring until melted and smooth.
- Season with salt and pepper.
- Simmer for 5 minutes until heated through.
- Serve warm.

- Using freshly shredded cheese improves texture.
- Half-and-half can substitute for heavy cream.
- Garnish with fresh parsley or chives.
- For a thinner soup, add a splash of reserved noodle water or milk when reheating.
