Description

A hearty and comforting cast iron chicken noodle soup, perfect for any season.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 1 cup egg noodles
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a cast iron pot over medium heat.
  2. Add diced chicken and cook until browned. Remove and set aside.
  3. In the same pot, add onion, carrots, celery, and garlic. Sauté until softened.
  4. Pour in chicken broth and bring to a boil.
  5. Add egg noodles and cooked chicken. Simmer until noodles are tender.
  6. Season with thyme, salt, and pepper.
  7. Garnish with fresh parsley before serving.
