Ingredients

- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups chicken broth
- 1 cup egg noodles
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a cast iron pot over medium heat.
- Add diced chicken and cook until browned. Remove and set aside.
- In the same pot, add onion, carrots, celery, and garlic. Sauté until softened.
- Pour in chicken broth and bring to a boil.
- Add egg noodles and cooked chicken. Simmer until noodles are tender.
- Season with thyme, salt, and pepper.
- Garnish with fresh parsley before serving.
