- 3 large eggs
- 1/3 cup vegetable oil
- 1/2 cup peach nectar or peach juice
- 1 lb peaches (peeled and chopped, about 3–4)
- Optional: drop of orange food coloring
- 1/2 cup unsalted butter (cut into pieces)
- 1/2 cup heavy cream
- 1 cup brown sugar (packed)
- 1 teaspoon vanilla extract
- 2 1/2 cups confectioners’ sugar (sifted)
Instructions
- Preheat oven to 350°F (175°C)
- Combine cake mix, eggs, vegetable oil, peach nectar, and optional orange food coloring in a bowl. Mix until smooth
- Gently fold in chopped peaches into the batter
- Pour batter into a greased 9×12 or 9×13-inch baking pan
- Bake for 28 minutes or until a toothpick inserted into the center comes out clean
- For the frosting: In a saucepan, combine butter, heavy cream, brown sugar, and vanilla extract. Cook over medium heat until butter melts and mixture thickens, about 3–5 minutes
- Remove from heat and stir in confectioners’ sugar until smooth
- Spread frosting evenly over the warm cake
