Description
A simple and unique cookie recipe that captures the classic Boston Cream Pie flavors with just five ingredients, featuring a soft cakey base, creamy custard flavor, and a rich chocolate drizzle.
Ingredients
Scale
- 1 box yellow cake mix (about 15.25 oz / 432g)
- 1 small box instant vanilla pudding mix (about 3.4 oz / 96g)
- 2 large eggs (room temperature)
- 1/2 cup unsalted butter, melted and cooled (113g)
- 1 cup chocolate chips (semi-sweet or dark, about 170g)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large bowl, combine the yellow cake mix and instant vanilla pudding mix. Whisk to blend evenly.
- In a separate bowl, whisk the eggs until slightly frothy. Slowly pour in the melted, cooled butter while whisking to avoid scrambling the eggs.
- Pour the wet mixture into the dry ingredients and mix on medium speed for about 1 minute until the dough is thick but pliable.
- Scoop tablespoon-sized dollops of dough onto the prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 12-15 minutes until edges are set but centers are still soft. Let cookies cool on a wire rack.
- Melt chocolate chips in short bursts in the microwave or over a double boiler, stirring frequently.
- Drizzle melted chocolate over each cookie using a spoon or piping bag. Let the chocolate set for at least 10 minutes before serving.
