Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, granulated white sugar, and packed light brown sugar until light and fluffy.
- Beat in the egg, vanilla extract, and honey until just combined.
- In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
- Gently fold in the quick-cooking oats and old-fashioned rolled oats until evenly distributed.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between cookies.
- Bake for 9 to 12 minutes, or until the edges are lightly golden brown and the centers still appear slightly soft.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
